Fact: When fall arrives, I love to bake, run, and eat. Plant-based cooking has become one of my favorite adventures. Every once in a while, something turns out so perfect that I have to share it.
Here is one of my favorite accidental recipes, made by combining a few recipes online and then adding flair. These muffins are obnoxiously good. And they make you run faster.

Magic Plant-Based Banana Muffins with brown sugar crumble.
Here's what you need for 12 muffins:
Main Muffin Mix:
3 ripe bananas (think spotted, brown, soft, pitiful.)
¼ cup vegetable oil or vegan butter softened
1 cup sugar
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
¼ cup brown sugar
2 tbsp vegan butter (I use Earth Balance)
Steps: Main Muffin Mix
Bake for 25 minutes at 360 or until a toothpick inserted comes out clean.
